I’ve been meaning to make this for awhile but the past few weekends have been so hectic that it’s just been breakfast sandwiches. After dropping the hubby off at work I headed straight home to try out this idea I had.
Admittedly this was my first frittata, so I was a little nervous. No recipe to follow, who knows how it could have gone down. Luckily it turned out wonderful! Who knew skillet frittatas were so damn easy? I sure didn’t and it may be my new breakfast hack.
I wasn’t sure if the little man would take it so while this was cooking I was having him scarf down some oatmeal. Low and behold, he ate nearly half of what was meant to be a nice big breakfast for me. But hey, at least I now know there’s another breakfast option for him!
Have you cooked with cast iron before? My pans are so neglected, I really need to use them more. Yes, eggs in a cast iron pan, I know what you’re thinking. They’re going to stick and this is going to be scary. Not the case! This flipped straight out of the pan and onto a plate with no spatula needed.
Cast iron skillet care, how to get your skillet to be non-stick
The main thing is making sure your skillet is well seasoned. If you don’t know what that means is that it’s spent a few times coated in the oil of your choice, baking in your oven. Also, the more you use your pans the better they get. Just never ever use soap on them.
The moment food has left the pan, while still hot, submerge it in hot water and it should wipe clean with a cloth. Always make sure to dry thoroughly before storing away. It sounds like a lot of work but look at it this way.
While your food is cooling to the point of being edible, you’ll clean your pan and then your meal cleanup is already done. That means more time to mom or drink wine. Since it’s morning, maybe that means a mimosa.
For this recipe, I used my smallest skillet. You can up the serving by doubling or tripling this recipe. This fed myself and my toddler.
Salmon and Feta Skillet Frittata Recipe
- 2 large eggs
- 2tbsp canola oil
- 2tbsp milk
- lemon pepper, to taste
- feta, crumbled
- canned salmon, round bones removed
- Heat your pan on medium with oil in it. Turn on your broiler as well.
- While your pan is heating, whisk eggs, milk and lemon pepper together. Once your pan is heated add this to the pan and sprinkle your salmon and feta on top immediately.
- Do not stir, let cook until edges are golden, this should take about 5 minutes. Once the edges are cooked and the middle is still loose, put it under the broiler and let it cook off until the top has set and is turning golden. This should take 2-4 minutes.
- Putting a plate on top of your skillet, turn your skillet upside down to release your frittata onto the plate. Do this one more time with another plate or use a spatula to get your frittata upright. Submerge your pan immediately for cleaning while your frittata cools.
- Serve with your choice of veggies or hash browns. It’s up to you from here on out!
