For quite some time our oven was on strike. The stovetop was just fine. But the oven would play dead. Frankly, we didn’t have much use for it anyway because most of what we make it on the stove or in the convection oven.
A couple of months ago, I attempted to turn it on. Something told me, give it a try. Maybe the cooking gods?

Since that day, all has been fine and I’ve been baking muffins like there’s no tomorrow.
My little guy loves pretty well anything I put in front of him, so he’s certainly an easy eater. I’m sure my mom wishes I would have been the same, I was super picky.
I find a lot of muffin recipes are pretty standard, boring and usually not containing much nutrition.
With that said, I’ve done some poking around.
Toddlers especially, eat in weird phases. Sometimes I find he’ll eat all day long. Other days he’s too distracted so muffins are a great way to pack some nutrition into little hand-sized treats.

Aside from Mr. P loving muffins, hubby and I like the portability of them. Easy to eat in the car, on the bus, wherever. It’s a great option on the go.
Most grocery stores have some awesome, fairly healthy options in their baking aisle.
Some ways you can jazz up these mixes is by adding mashed bananas instead of oil. Dried fruit and nuts. Maybe even some shredded coconut!
